Kiwi fruit sorbet - Beat the heat!

8 ripe kiwifruit 
2/3 cup sugar
1 & 1/2 cup water
juice of 1 lemon
juice & zest of 1 lime
1 tbsp vodka

Put the sugar and water in a pan and bring to the boil, allow to simmer for 5 minutes and then let cool to room temperature. 

Peel the kiwifruit and then puree them in a blender or food processor. You want to do this until they are just about smooth, a few small chunks will be fine. The trick is to not over do it, you want to keep the seeds intact. 

Add the sugar water, lemon juice, lime juice & rind to the kiwifruit puree. Mix together and then put it in the freezer for 4 hours. 

Remove from the freezer and briefly pulse it in the food processor, adding the vodka as you do this. Put back in the freezer for another 4 hours. 

​Enjoy this low FODMAP sorbet as a fantastic summertime treat.
