FODMAP friendly banana loaf

FODMAP friendly banana loaf
4 ripe bananas - mashed
1/3rd cup melted butter
3/4 cup light brown sugar
1 egg
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon cinnamon
1 & 1/2 cups rice flour
a pinch of salt


Preheat your oven to 175C (347F)
Mash the bananas in a mixing bowl and set aside. Put the sugar and butter in a pan over a medium heat until the butter is melted. Add this warm mixture to the mashed banana, and mix together with a spoon.

Put the vanilla, egg, baking soda, cinnamon, salt & gluten-free flour into the mixing bowl containing your banana/butter mix. Mix all ingredients together thoroughly.

Pour the batter into your loaf tin and put in the oven. This should take about an hour and ten minutes to cook.

Love this recipe. Try adding some blueberries to the mix.

Glad you enjoy it. Blueberries sounds like a good idea, will have to try it. I hope you made the lemon curd to go with the loaf at some stage, it really works well.

I followed your recipe exactly and it came out uncooked in the middle and almost burnt outside. I've put the loaf back in the oven to try to get the inside cooked through, but I don't have high hopes.

Baking in the oven as I'm commenting. I topped the batter doing this... I used a double boiler, melted some Enjoy Life chocolate and mixed some chopped walnuts. YUMMY! The house amells great. Thanks for posting the recipe. Simple and i had everything in hand.

So, i just tasted the banana loaf. First of all, its light and not too savory. Took 40 minutes in oven and dried a little. I placed the pan middle rack. Next time, upper rack and 325 degress. Adding blueberries like a Tom suggested, will add moisture to the batter.

We are from Georgia in the US so I had to bake this at 350 degrees for 55 min. It was wonderful. My son loved it. I left out the cinnamon because I never use it in banana bread. It was as good as my usual wheat based recipe.
