For me, one of the more difficult elements of starting the FODMAP process was saying goodbye to my sourdough starter. It's taken me months to learn how to make good sourdough, now I can't make it any more.
Rather than dwell on this, I've commenced a new starter using gluten-free flour. It smells nice and sour, but I just can't get it to bubble like starter should. I'm concerned that I'll not find a way to make it work.
